Absolutley Delicious! Impressive presentation and easy.
Approx 4.5 lb porkloin
8 cloves of garlic
Salt & Pepper
Bacon, buy from the butcher’s counter, not the prepackaged type.
Dry White Wine
If available- Built-In Meat Thermometer
Preheat oven to 400 degrees.
Salt and pepper all sides of the pork.
Chop garlic and mix with thyme and Olive oil in a small bowl.
Cover the pork with the oil mixture.
Layer the bacon over the top and sides of the pork.
Carefully tie roast to secure the bacon.
Place in roasting pan. Add 1/2 cup of each wine and broth to the pan.
Bake uncovered at 400, repeat additions of 1/2 C wine/broth every 20 mins until internal temp reaches 145 for Medium rare. I used 170 and was happy.
Cover pan with foil and allow to stand for 10 mins before slicing in 1/4″ servings.
Serve with pan juices.
